I’ve not mentioned this before here because the intention for this page was to be a technical place dedicated to my professional life, but after getting my annual domain name renewal reminder, I figured I should expand the subject range a bit in order to get the most value out of this place.
Anyway, one of my hobbies is baking. I enjoy dreaming up recipes, trying other people’s recipes, obviously eating them and taking (whatever is left of…) my creations into the office for other people to finish off.
So here’s a rundown of something I made the other day – Lemon Drizzle Blondies with a Biscuit Base.
There’s not much more I hate than going to a recipe site and having to scroll past a million adverts just to get to the bit you want. So I’ll keep this brief:
Ingredients
Blondie:
- 215g Unsalted Butter
- 180g Granulated Sugar
- 1 Large Egg + 1 Yolk
- 60ml Lemon Juice
- 300g Plain Flour
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
- Zest from 1 Lemon
Glaze:
- 250g Icing Sugar
- 6-7 tbsp of Lemon Juice
Biscuit Base:
- 200g Digestives
- 70g Melted Butter
Method
- Blitz digestives and add melted butter and press into the bottom of a greased, lined 8×8 square tin.
- Cream together the room temp butter with the sugar.
- Add Eggs and lemon juice and mix.
- Sieve in the flour.
- Add baking powder.
- Add the salt.
- Fold in the zest and make sure the ingredients are completely combined.
- Add to the tin and bake at 150 (fan) for 35 minutes. (Skewer/Knife inserted should be nearly clean)
- Allow the cake to cool before adding the icing on top.
- Add the icing/lemon mix.
- Chill in the fridge overnight before cutting.
